Oregano
Parmesan cheese
Egg yolk

Place it in a lightly oiled bowl to prove. Leave to prove for 15 minutes until doubled in size or place in the fridge overnight.
Knock back the dough, then gently mold it into a small ball, or braid it as you wish. At this step, you can fill the dough with the filling. Place it on a baking tray lined with parchment to prove for 15 minutes until doubled in size.
Preheat the oven to 150˚C
After 15 minutes, rub the top of the dough with egg yolk, sprinkle with oregano and parmesan cheese.
Bake until golden brown (about 30 minutes) and the bread sounds hollow when tapped underneath. Cool on a wire rack.
