Lemper, Indonesian Food To Enjoy On The Road

Many countries have food on the go, such as onigiri from Japan, pao from China, and burger from America. They are food with almost complete nutrition that takes only one hand to eat, they don’t have to be on the table to serve, we can enjoy them on the road.
In Indonesia we have lemper. It is sticky rice with chicken meat inside. Children (and their parent) love to enjoy lemper while traveling because lemper contains carbohydrates for energy and rich in proteins to keep us healthy and avoid hungry while traveling.

To be honest, lemper is not easy to make, need plenty of time, but it is delicious. Here is the recipe if you want to try.
Ingredients :
1 kg sticky rice, soak about 2 hours
700 ml coconut milk, boiled with 5 sheets pandan leaves and 1 tablespoon salt
1 chicken breast without bones, boiled and then shredded, you can ask your kid to help shred the chicken (see pict)
10 candlenuts
1/2 tablespoon coriander
3 garlic, minced
1 cm kencur (Asian spice)
Salt, pepper, sugar as you like
1 cup water
Banana leaves and coconut stick to wrap
Methods :
1. Drain sticky rice, then steamed for 10 minutes. Remove from the steamer, mix with coconut milk, stir well.
2. Steam sticky rice again for 30 minutes. After 30 minutes, open the steamer, stir the sticky rice in the steamer. If there are sticky rice that still uncooked, stir towards the top, and then steam again for 10 minutes. But if the entire sticky rice was perfectly cooked, remove from the steamer and place on the tray in order to quickly chill.
3. To make the filling, mashed all spices using mortar and pestle: candlenuts, coriander, garlic, kencur, salt, pepper, and sugar. Mix all mashed spices, chicken meat, and water in a skillet, and heat. Stir until the water dries up.

4. Take 3 tablespoons sticky rice, flatten on top of a cling wrap, put 1 tablespoon chicken meat, and then round up the sticky rice to cover the entire chicken. Then wrap with banana leaf and embed with a piece of coconut stick.

I've never heard of lemper before - I've eaten Indonesian food a lot but never come across it - it's kind of like inside out sushi! Looks delicious

I am not the most patient person, so I'm not sure how well I could cook the rice - 2 hours is a long time. I've never heard of kencur before. What kind of flavour does that add?

This looks good! It reminds me of chinese glutinous rice dumplings which are wrapped with bamboo leaves. I might want to try this recipe.
